Mashed Potatoes with Bacon

3 lbs. Yukon gold potatoes
1 lb. of Eureka’s Hungarian Bacon with Red Pepper
1/2 cup butter
1/2 cup chives
1/2 cup milk
8 oz Cream cheese
1 cup cheddar cheese (to garnish)
1 tbs salt
2 tbs garlic powder
Step 1: Add the potatoes (skin on) to a saucepan and cover with cold water. Cook the potatoes until tender.
Step 2: While potatoes are cooking. Chop the bacon into 1/2 inch cubes and pan-fry until browned and crispy. Transfer on a paper towel.
Step 3: Drain the potatoes & transfer to a larger bowl. Mash the potatoes and mix in butter, cream cheese, milk, chopped chives, bacon, garlic powder and salt. Mix until desired consistency.
Step 4: Transfer mashed potatoes to a serving dish. Top with cheddar cheese, chives, and bacon.
